Roasted cauliflower is a quick and tasty way to prepare cauliflower. This is also a healthy dish that is versatile, as you can switch up the seasonings that you use. I don’t cook a lot with cauliflower, and this is my go-to recipe when I cook it. Whether seasoned with olive oil, salt, and pepper, or you use spices and some cheese, roasted cauliflower is quite versatile and fits effortlessly into a variety of meals, from weeknight dinners to holiday dinners.
Ingredients
Cauliflower
Olive Oil
Salt & pepper or other spice blend
Optional – cheese

Directions
Line a baking sheet with aluminum foil or parchment paper. Preheat the oven to 425°F.
Wash the cauliflower thoroughly, cutting it into 1/2″ thick. Be sure to dry the cauliflower thoroughly before baking. (You may want to prepare this step early to allow the cauliflower to dry).
Toss the cauliflower with oil and seasonings. You can use salt and pepper or whatever blend you like. We have used a variety of seasonings, such as Italian or cajun.
Place the cauliflower on the baking sheet in a single layer.
Roast the cauliflower until it begins to turn brown and the stems are tender.
You can add shredded cheese and roast an additional 5 minutes or so until the cheese is melted and browning.
