Chia seeds are so good for you, and I try to fit them in my diet when I can. These are a wonderful whole food vegetarian source of Omega 3s, just to name one health benefit. These little seeds are easy to use and chia pudding is simple to prepare. The nice thing about chia pudding is that you can change up the flavor in many ways, like this chia with matcha, which is both healthy and fun green color!

Ingredients
– 1 cup milk (any milk of choice, eg. 2% milk or coconut milk)
— 2 tsp matcha powder
– 3 tbsp chia seeds
– 1 tbsp maple syrup, honey – or another sweetener of choice, to taste
– ½ tsp vanilla extract
– Optional toppings: fruit, nuts, granola, etc.

Directions
In a bowl or mason jar, mix the milk, vanilla extract, matcha and sweetener (optional) until thoroughly combined.
Add the chia seeds, and stir thoroughly to evenly distribute them in the mixture.
Let it sit for 5 minutes, then stir again or shake to prevent clumping.
Cover and refrigerate for at least 2-3 hours, or overnight, until the pudding thickens to your desired consistency.
Before serving, give it a stir and add your favorite toppings for extra flavor and texture.
