Smashed Cucumber Salad

We have been to several Asian restaurants that served cucumber salad, and we really enjoyed it, so we have been making it at home instead.  This is a wonderfully fresh dish that is quite flavorful.  I love the spices, strong garlic, and smoky sesame oil.

Ingredients

Cucumbers (we prefer Persian)
Korean Red Pepper flakes – 2 tbsp (we use this Taekyung Red Pepper Powder)
Sesame oil – 2 tsp
Rice Wine Vinegar – 2 tbsp
Fresh garlic – 3-5 cloves
Salt 

Directions

We usually get small Persian cucumbers, which come in 1-2lb bags at the grocery store. Trader Joe’s usually sells these in packs or bags.

Place the side of a wide knife against the cucumbers and carefully smack the knife until the cucumbers split.

Then trim the ends and cut lengthwise. 

Toss with salt and allow to drain in a colander for about 20 minutes.

While the cucumber is draining, you can prepare your dressing.

Press the garlic cloves, and create your dressing with the garlic, sesame oil, and chili pepper flakes.

We let the dressing sit a while before mixing with the cucumbers.

Once the cucumbers have drained, place them in a bowl.

Mix thoroughly, and enjoy!
