Ingredients
- 3 tablespoons of chia seeds
- 1 cup of milk (regular milk, almond, coconut, soy, etc)

Directions
In a bowl or mason jar, mix the almond milk, pumpkin purée, maple syrup, pumpkin pie spice, and vanilla extract until well-combined.
Add the chia seeds and stir to evenly distribute them in the mixture. Let it sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 2-3 hours, or overnight, until the pudding thickens to your desired consistency.
