Chia seeds are great addition to a healthy eating routine, and I try to fit them in my diet when I can. They are a fantastic vegetarian source of Omega 3s, as well as other benefits. These little seeds are easy to use and chia pudding is simple to prepare.

Ingredients
– 1 cup milk (any milk of choice)
– 3-4 tbsp chia seeds
– 1 teaspoon blue spirulina powder
– 1 tbsp maple syrup, honey – or another sweetener of choice, to taste
– ½ tsp vanilla extract
– Optional toppings: fruit, nuts, granola, etc.

Directions
In a bowl or mason jar, mix the milk, vanilla extract, and sweetener (optional), until thoroughly combined.
Add the chia seeds and stir to evenly distribute them in the mixture.
Let it sit for 5 minutes, then stir again or shake to prevent clumping.
Cover and refrigerate for at least 2-3 hours, or overnight, until the pudding thickens to your desired consistency.
Before serving, give it a stir and add your favorite toppings for extra flavor and texture.
