Energy bites are a fun snack and good, healthy source of energy. I like to use ingredients such as chia seeds, flaxseed meal because these are good for you. As a vegetarian, things like the chia seeds are a good source of omega 3 fatty acids.
Energy bites are easy to make and also very easy to customize to your own preferences.

Ingredients
- 1 cup rolled oats
- 1/2 cup flaxseed meal
- 1/3 cup mini chocolate chips
- 1/3 cup shredded coconut
- 1/3 cup dried fruit and/or nuts (chopped)
- 1/2 cup peanut butter or alternative (cashew butter, sunflower butter, etc)
- 1/3 cup honey (preferably local!)
- 1 tsp vanilla extract

Directions
Mix all of the ingredients thoroughly.
I generally start with the dry ingredients before adding the wet ingredients.
If needed, add more nut butter or honey if the ingredients are not sticking together well.
Form into 1″ balls and refrigerate until firm.

Adding flaxseed meal and local honey makes these snacks sound super nutritious. They look so simple to make and customize! I usually add jaggery to my energy bars, will try your versionš.
