Energy bites are a great source of energy, but can also be a boost of nutrition.
I often make energy bites with ingredients such as chia seeds, and flaxseed meal is a great source of nutrients, such as ALA.
Ground flaxseed meal offers benefits such as protein, fiber, and omega 3 fatty acids.

Ingredients
- 1 cup rolled oats
- 1/2 cup flaxseed meal
- 1/3 cup mini chocolate chips
- 1/3 cup shredded coconut
- 1/2 cup peanut butter or alternative (cashew butter, sunflower butter, etc)
- 1/3 cup honey (preferably local!)
- 1 tsp vanilla extract
Directions
Mix all ingredients thoroughly. I start with the dry ingredients, then add in the wet ingredients.
If needed, add more nut butter or honey if the ingredients are not sticking together well.
Form into 1″ balls and freeze until set (about 1 hour).
I’ll have to try these! They sound like they’d be a much healthier afternoon snack than a cookie or some chocolate!

I use flax meal in my smoothies. I never thought to check Trader Joes for flax seed.

I am going to have a go at making my own energy balls. I tend to buy cereal bars which get eaten up too quickly. These would be great for the kids packed lunches.
